Calamari Burger with Sriracha Mayonnaise
Step up your burger offering with this calamari burger and a sriracha based mayonnaise. It adds real kick and is a great compliment to our panko squid rings. Serve with house made chips and you have a burger that your patrons will love.
With the spicy sriracha based mayonnaise made prior to service this burger can be made in under 10 minutes. Ideal as a lunch option for pubs, clubs and cafes.
Ingredients
- Pacific West Panko Squid Rings
- 1 cos lettuce, leaves separated
- 4 tbsp capers
- 2 large pickles, or a handful of cornichons
- 1 lemon, juiced
- 3 tbs Sriracha - sriracha mayonnaise
- 1 garlic clove, finely grated - sriracha mayonnaise
- 1 cup quality mayonnaise - sriracha mayonnaise
- 2 tbs fresh lemon juice - sriracha mayonnaise
- Kosher salt - sriracha mayonnaise

Instructions
For the sriracha mayonnaise
Stir garlic, mayonnaise, Sriracha, and lemon juice in a small bowl to combine; season with salt.
Whizz the capers, pickles and sriracha mayonnaise, then add a little lemon juice and season.
For the calamari burger
Deep fry the Pacific West Panko Squid Rings at 180C for 2-3 minutes. Pat dry with paper towels. Lightly toast the burger buns so that they are crisp. Add 1-2 tbs of the spicy tartare sauce and plenty of lettuce leaves. Put the calamari on top of the lettuce, add a final spoon of the tartare sauce and a little squeeze of lemon, then close the bun.
