Crab and Avocado Rolls
Ideal for a cafe or pub lunch option. Our crab and avocado rolls are a quicker, more economical version of a classic lobster roll. This dish works as a takeaway or sit down option. Made to order and served in under 10 minutes. Try it, it's a winner! We use Pacific West's Blue Swimmer Crab Meat. This has been fully cooked and chilled and 'ready to go'.

For the crab and avocado rolls
Put the mayonnaise, celery, lemon juice and tarragon in a bowl, season and stir well. Fold in the crab and avocado. Split the rolls vertically down the middle (but not completely), and spread with the butter. Fry butter-side down in a frying pan over a medium heat until golden. Cool a little. Fill with the crab mix and some cress then finish with a pinch of cayenne pepper.
