Crab, Chilli and Herb Omelette
This crab omelette will add real class to any breakfast menu. Ideal for cafes looking for a signature breakfast dish. Try it, your customers will be back for more!
Mix the crab, chilli, herbs and crème fraîche and season well. Beat the eggs with some seasoning until pale. Heat 1 tsp oil in a small frying pan, and pour in the eggs, making a thin omelette. When the omelette is just set, tip the crab mixture in, fold in half and warm through for a minute. Serve with chilli sauce.
