Fast and Perfect Crab Linguine
Crab linguine is a great dish for venues that want to turn tables quickly and at the same time present a meal that still has the 'WOW' factor. This dish can be cooked and plated in the time it takes to cook the pasta. A great menu addition for venues that want to expand their seafood list and return a great GP.
We use Pacific West's Blue Swimmer Crab Meat. This has been fully cooked and chilled and 'ready to go'.
For the crab linguine
Cook the linguine and drain. Meanwhile, fry the garlic, chilli and shallots in 3 tbsp olive oil until soft without adding colour. Add the brown crab meat and cook for a minute. Add the drained linguine and 2-3 tbsp of the cooking water and toss. Take off the heat and add the lemon zest, juice, white crab and tarragon, and season. Toss again and serve.
