Tostada is the name given to various dishes in Mexico and other parts of Latin America which include a toasted tortilla as the main base of their preparation. Our crab tostadas offer venues a range of opportunity, from entrees to finger food, platters and canapes this simple dish can find a place in cafes, pubs, bistros and events. The crabmeat mixture can be made a day in advance and refrigerated in an airtight container. The dish can be assembled and served in minutes.
We use Pacific West's Blue Swimmer Crab Meat. This has been fully cooked and chilled and 'ready to go'.
- Pacific West Blue Swimmer Crab meat
- 1 tbs olive oil
- 2 tbs mayonnaise
- 3 tbs finely chopped red onion
- 1 jalapeño, stemmed and finely chopped
- 3 plum tomatoes, cored, seeded, and chopped
- 1/4 cup lightly packed coriander leaves, chopped
- 2 limes, finely grated zest and juice
- Salt and black pepper
- 8 flat tostada shells
- 1 avocado, pitted and thinly sliced
- Coriander sprigs
- 2 limes, quartered
For the crab tostadas
Put the crabmeat in a bowl. Add the oil, mayonnaise, onion, jalapeño, tomatoes, coriander, and lime zest and juice to the crabmeat. Fold all ingredients until well blended. Season well with salt and pepper. Top each tostada shell with a few slices of avocado, place a generous serving of the crabmeat mixture over it, and garnish with a sprig of coriander. Serve each with a lime wedge.
