Grilled Hake skewers in a zhoug paste is an exciting fish and healthy option ideal for restaurants, pubs and clubs. The zhoug is a punchy combo of fresh coriander, parsley, cloves and chilli. Zhoug comes from Yemen but  it’s most famous as a much-loved condiment in Israeli street food. Here, it is used as a zingy marinade for grilled fish and served with a chickpea salad. The zhoug can be made prior to service and will store well in a refrigerator. Our chickpea salad and hake skewers can both be ready to serve in under 10 minutes.
