Roasted Prawns and Tomatoes with Zucchini Noodles
Our roasted prawns with tomatoes and zucchini noodles is fast to make and can be a made to order in under 15 minutes. A simple zucchini noodle pairs nicely with the classic Italian combination of prawns, garlic and tomatoes. An ideal dish for calorie conscious patrons.
We use Pacific West's Raw Prawn Cutlets. Ingredients
- Pacific West Raw Prawn Cutlets - roasted prawns
- 1 clove of garlic, minced - roasted prawns
- 1/2 of a lemon - roasted prawns
- 1 punnet cherry tomatoes, halved - roasted tomatoes
- 2 medium green zucchinis, spiralized into noodles or sliced into ribbons - zucchini noodles
- Kosher salt and black pepper to taste
- Extra-virgin olive oil
Instructions
For the roasted prawns and tomatoes
Preheat oven to 220 C. Place the tomatoes on a baking sheet, season and drizzle with olive oil. Roast in the oven for 10 minutes. In a bowl toss together the prawns, garlic, olive oil, salt and pepper. Remove the tomatoes from the oven and pour the prawn mixture onto the baking sheet. Place the tomatoes and shrimp back in the oven and roast for approximately 5 more minutes or until the prawns are nearly cooked through. Remove from the oven and pour over the top of the zucchini noodles. Season and squeeze the juice of half a lemon over the top. Serve immediately.
For the zucchini noodles
Using a vegetable spiralizer or a peeler, cut zucchini into noodle ribbons. Heat a large non-stick skillet over medium high heat. Once the skillet is hot add in the olive oil and swirl to coat the bottom of the pan. Add in the zucchini noodles and season with salt and pepper. Sauté the zucchini noodles for 1-2 minute
