Szechuan hot sauce is a sweet and spicy sauce that we use to spice up Pacific West’s Crumbed and Tempura Scallops. With the Szechuan hot sauce pre-made (you can scale up the ingredients to make more of the sauce ‘ready to go’), it’s just a matter of deep frying the scallops. This dish makes an interesting addition to menus and can be cooked, served and plated in under 10 minutes.
