Pacific West's Tempura Fish Cocktails are premium bite sized fish pieces that are battered in a light Japanese style tempura batter.
Ingredients
- Pacific West Tempura Fish Cocktails
- 1tbs vegetable oil - sweet and sour sauce
- 1tbs peeled and grated fresh ginger - sweet and sour sauce
- 2 cloves garlic, minced - sweet and sour sauce
- 1 cup pineapple juice - sweet and sour sauce
- 2tbs rice vinegar - sweet and sour sauce
- 1tbs brown sugar - sweet and sour sauce
- 1tbs light soy sauce - sweet and sour sauce
- 1tbs cornstarch blended with 2tbs cold water - sweet and sour sauce
Instructions
For the sweet and sour sauce
Heat a wok or saucepan over high heat and add the oil. When the oil is hot, add the ginger and garlic. Stir-fry just until fragrant, and then add the juice, vinegar, brown sugar and soy sauce. Bring to a boil and cook until the sugar has dissolved. Stir in the cornstarch and water mixture and cook until thickened, about 1 minute. Remove from heat and use immediately or store in an airtight container in the refrigerator for up to 2 weeks.
